Here’s an easy but delicious week day meal. Fresh and light, this chicken dish is amaze-balls.
Ingredients:
Chicken Breast
Mozzarella Cheese
Grape Tomatoes
Fresh Basil
Olive Oil
Balsamic Vinegar
Directions:
- Preheat oven to 450°F. Spray a large baking sheet lightly with spray.
- Place chicken on baking sheet, top with sliced mozzarella and bake in the oven for 25 minutes.
- Meanwhile, chop tomatoes, basil and additional mozzarella. Mix in a bowl with olive oil and balsamic vinegar.
- Remove chicken from oven and spoon the tomato mixture over the top.
